Simple Pineapple Salsa

I love entertaining and I love cooking. But sometimes combining the two is more stressful than it is enjoyable. That's why I am always on the lookout for recipes that are quick, easy and pack a powerful punch of flavor. My simple pineapple salsa recipe does all that. Plus, it is pretty good looking if I do say so myself!





It starts by peeling, coring and chopping a fresh pineapple and adding it to a large bowl. I love pineapple. So sweet and juicy! Believe it or not this is the hardest step in the recipe. If you are really pressed for time, pick up the already peeled and cored pineapple from the produce section. Most of the time it cost a little more, but it is prep time saver for sure!



Next, dice 1 large red bell pepper (you can use yellow or orange as well), 1/2 a medium red onion and a medium jalapeno and add them to the bowl with the pineapple. Removing the seeds from the jalapeno helps control the heat level. Feel free to add more or less to your taste! Then add lime juice and stir in cilantro. Finally add salt and pepper to taste.



There you have it! The perfect, simple pineapple salsa. It is fabulous right out of the bowl with your favorite tortilla chips. We love the blue ones! Or if you are looking to spruce up grilled chicken or fish, just spoon over a few scoops. Check out the full recipe below. I hope you enjoy it!!

This pineapple salsa recipes strikes the perfect balance between sweet and spicy. It feeds a crowd, but is easily adjustable. It is perfect served straight out of the bowl with tortilla chips. For an amazing main course, try it over grilled chicken or fish.

ingredients:


  • 1 medium pineapple peeled, cored and chopped
  • 1 large red bell pepper, diced
  • 1/2 medium red onion, diced
  • 1 medium jalapeno, seeded and minced
  • 1/4 cup chopped cilantro
  • juice of 1 lime
  • salt and pepper to taste

instructions:

In a large bowl combine pineapple, red bell pepper and red onion. Add lime juice. Stir in cilantro. Add salt and pepper to taste. Enjoy!!!

  16. This looks amazing and fairly simple to do. I have never made stuffed anything but these look simple enough to try sometime. I love how you made garlic zucchini noodles to go with the dish. That’s my favorite way to eat zucchini noodles. I use my spiralizer weekly. Definitely one of the best birthday gifts I have received.
