Cheesy Mini Corn Dogs Muffins


Just added a new recipe to What's for Dinner Page, cheesy mini corn dog muffins.  These are tasty bite size treats perfect for lunchtime or anytime.  Pinterest was my inspiration and as you can see and then I put my own twist on them.


Cheesy Mini Corn Dogs Muffins

Prep time: 10-15 minutes
Bake Time: 8-12 minutes
Yields: 12
(Makes the perfect number for my small boys but you may want to double the recipe)

Ingredients:

Dry:
¾ cup corn bread mix
¼ cup shredded cheddar cheese

Wet:
½ cup Plain Greek Yogurt (We use 0% fat)
¼ cup milk
1 TBSP yellow mustard
1 TBSP honey

12 cocktail hot dogs (We use uncured all beef because they are nitrate free). 

Directions:

Preheat oven to 375 degrees. In a large bowl combine dry ingredients:  corn bread mix and cheddar cheese.  In another bowl combine wet ingredients:  yogurt, milk, mustard and honey.  Pour wet ingredients into dry ingredients and thoroughly mix all the ingredients together.

Lightly grease muffin tins with oil or cooking spray.  Using a spoon, portion 1 TBPS of mixture into each mini muffin tin.  Place one hot dog into the middle of each cup. 


Bake for 8-12 minutes until cornbread is golden brown.  Cool in muffin tin for 5 minutes and then remove and serve with a side of ketchup.  Store leftovers in refrigerator and reheat in microwave for 20-30 seconds before serving.
